1. With over 50 years of experience in making banh it, Ms. Huynh Thi Hien (Nhon Thanh Trung Commune, Tan An City, Long An Province) has not only preserved the traditional profession but also spread the flavor of her hometown to many places. Since the age of 10, Ms. Hien has helped her mother make banh it to sell.
“Wrapping banh it and making the filling are the most important. I choose really soft, not dry coconut and absolutely do not use coconut with water. Sugar, beans, coconut are fried and seasoned, combined with sticky rice flour mixed with pandan leaves to create a unique flavor.” Ms. Hien shared.
Ms. Huynh Thi Hien (Nhon Thanh Trung Commune, Tan An City) and her husband alone supply the market with more than 3,000 banh it each month
Her banh it is favored by customers because of its delicious and flavorful filling. The process of making banh it requires meticulousness at every stage. Each batch of 250-350 cakes, the couple wakes up at 1am.
The banh it takes about 40 minutes to cook, and they let it steam out every 10 minutes. Although it is hard work, the job brings a stable income for her family. The current selling price ranges from 6,000 VND (traditional filling) to 7,000 VND (durian filling).
In particular, her banh it is ordered by many customers inside and outside the province thanks to the good reputation spreading far and wide.
During Tet, the number of orders increases, there are times when Mrs. Hien wraps banh it until New Year's Eve. This year, she plans to complete the orders early to spend time for the pomelo garden, cook rice to worship her ancestors and gather with her children and grandchildren.
2. Banana candy is also a traditional delicacy that is indispensable during Tet in Western Vietnam. Ms. Le Thi Hieu (Quoi Thien commune, Vung Liem district, Vinh Long province) has been involved in the banana candy stir-frying profession for more than 5 years.
Every year, Ms. Hieu stir-fries about 500kg of banana candy, starting from the first days of the 12th lunar month to serve the Tet market.
During the day, she works for other people, and only in the afternoon does she start stir-frying the candy. She does most of the steps herself.
Banana candy is a familiar dish of the people from Western Vietnam
"After stir-frying, the candy is poured into a mold lined with plastic wrap, sprinkled with sesame and roasted beans on top, then spread evenly. To let the candy take shape and achieve a delicious chewy texture, I let the candy rest for another 2 hours before cutting it into small pieces and packaging it. Currently, banana candy on the market is sold for 70,000-80,000 VND/kg, affordable and very popular" - Ms. Hieu shared.
Banana candy has a shiny brown color, fragrant with coconut milk, the sweetness of malt combined with the stickiness of banana, the richness of peanuts, sesame and the light spicy taste of ginger will be more delicious with a cup of hot tea.
Enjoying rustic delicacies, sipping hot tea, feeling the Tet atmosphere full of love and connection - that is the simple but meaningful happiness of spring./.
