Tasting Mekong Delta rustic food, Mam cong in Long An

Mam cong (fermented salted crab dish ) is one of local popular foods in the Mekong Delta region and a specialty in Long An province.

Phuoc Lai commune in Can Giuoc District is famous for making Mam cong with many households that are involved in the carft.

Craftman Huynh Thanh Hai, 46, in Tan Thanh B Commune has spent more than 20 years in producing Mam cong.

The household business had built a prestigious brand, "Mam cong Nga" over the past years. He has monthly produced more than 300kg Mam cong at a price of VND70,000-VND100,000 per kg.

The skillfull carftman has carefully selected elements and material resources for producing the dilicious food. It is made from combining small crabs, salt, and sugar through various stages.

"Cong" is a small crab that lives in brackish watery areas in the southern region. "Cong" are carefully selected, washed and then grinded with water and sugar. After 3-4 days of constant sun, people extracts water from the mixture and store them in jars for about six months to keep their freshness and flavor.

Hai said that he wants to preserve the traditional craftmaking due to love for ancestors’ career./.
